7. Take Few drops Yellow Food Colouring
8. Get Few drops Green Food Colouring

1. Cream butter and sugar together into a smooth paste. Mix in flour bit by bit, making sure there are no lumps. Divide into two bowls and set to one side.
2. Beat 3 eggs gently together, adding Lemon juice, zest and yellow colouring, set to one side.

4. Add the lemon / yellow to one bowl and mix together until silky smooth and just drops the spoon.
5. Repeat the procedure with the Lime / green mix to second bowl.
6. Using two large “ pudding” spoons, add each mix to muffin cases, filling to 3/4 full.
7. Cook in medium hot, gas mark 5-6, 190-200 Celsius, for about 15 minutes, then turn trays around for a further 5 minutes until golden brown on top.
8. When cool, i topped mine with buttercream and sprinkles in two colours for each variety..
