  1. Prepare 400 grams pumpkin (squash)
  2. Take 4 eggs

  3. (Optional) Bake pumpkin for 40min till soft (to be mashed)
  4. Put baked pumpkin into a bowl (if not baked - into blender), mash it with a fork
  5. Add to pumpkin eggs, flours, sugar, cinnamon, ginger, baking powder, olive oil - mix ingredients
  6. Pour into baking mould and put into the oven.
  7. Bake at 180ºC for about 30-35 minutes (check with toothpick or knife: it should be dry)
  8. (Optional) Pour icing: mix sourcream or youghurt, lemon and tangerine zest, lemon juice and honey.
