Prepare 6 chicken thighs, bone in

Get Bundle spring onions

Get 3 garlic cloves
Prepare 1 small onion
Make ready 3 scotch bonnet chillies
Get 1/2 tsp fried thyme
Make ready 1 lime, juiced
Make ready 2 tbsp soy sauce
Get 2 tbsp veg oil
Take 3 tbsp brown sugar
Make ready 1 tbsp ground allspice
Take 1 tbsp ground cinnamon
Instructions to make Jerk Chicken:
Blend all marinade ingredients together to make a puree. Give it a taste, and adjust if you want it sweeter/saltier/hotter.
Make some slashes in the chicken thighs and pour the marinade over the meat. Rub it into the chicken. Cover and leave overnight in the fridge to marinate.
When you're ready to cook it, preheat the oven to 180C. Oven roast the chicken for 30-45minutes, until fully cooked through.
While the chicken is cooking, prepare the rice and peas! Cook the rice according to the instructions, and throw in the peas at the last minute. Mix them up and wala! Serve with the chicken and enjoy! Squeeze some lime over it all for extra flavour!
