The ingredients needed to make Minestrone:
  1. Make ready 1 potato
  2. Take 1 carrot
  3. Make ready 1 courgette
  4. Prepare Half white onion
  5. Prepare 75 gr beans canned
  6. Get 75 gr peas
  7. Make ready 75 gr spinach
  8. Take 1 celery stick
  9. Get 100 gr cauliflower
  10. Get 4 small tomatoes

Steps to make Minestrone:
  1. Mince the garlic and the parsley together. Put it aside
  2. Cut all the vegetables (apart from the spinach, the beans and the peas) and put them in a bowl. Add the garlic/parsley mix and mix well
  3. Warm some olive oil in a large pot and add the garlic clove.
  4. Remove the garlic and add the vegetables (no spinach,peas and beans). Stirr it and add enough water to cover it. Cook t for 30 min.
  5. After 30 min, add the spinach, the beans and the peas (cooked peas). Coom it for 1 hr (the water will be reduced)
  6. Serve it in two bowls. Cover the minestrone with parmesan cheese and olive oil
