The ingredients needed to make Chorizo and tomatoes:
  1. Take 1 Chorizo sausage
  2. Get 1 large onion
  3. Get 400 g tin chopped tomatoes
  4. Make ready 1 tsp paprika
  5. Take 1 chopped garlic clove
  6. Get 125 ml red wine
  7. Take 1 tbsp cider vinegar
  8. Make ready 1 tbsp olive oil

Instructions to make Chorizo and tomatoes:
  1. Gently fry the onions until soft
  2. Add the garlic and paprika and continue stirring then add the chorizo. Fry and stir for about 3 minutes
  3. Add the tinned tomatoes and gently simmer for 20mins
  4. I served mine with roasted vegetables

While chorizo is cooking, shred the cheese and dice the tomatoes and set both aside. Add lightly beaten eggs, green chilies, tomatoes and shredded cheese to the chorizo. Add in the rigatoni, then pour in the stock, tinned tomatoes and tomato puree.
