The ingredients needed to make Afghan pulao:
  1. Get Shredded carrots
  2. Make ready Basmati rice
  3. Get Almond/cashew nuts
  4. Make ready Cumin and coriander powder
  5. Make ready Boned meat or lamb shanks
  6. Take Sugar
  7. Take Oil
  8. Prepare Celery (optional)
  9. Make ready Chilies (optional)
  10. Take Raisins
  11. Prepare Onions (lots of onions)
  12. Take Ginger and garlic
Instructions to make Afghan pulao:
  1. Start by washing your meat. Then add oil to a pan and sauté the onion till translucent (be careful to not over fry he onions! Don’t brown the onions) else you’ll end up with a bitter broth. Then add the meat and brown it
  2. Add ginger and Garlic and book the meat till very soft. Mean while soak your basmati rice for 20 minutes
  3. Wash peel and cut your carrots in to thin strips, add it to a foil paper together with the mugs and raisins add a teaspoon of sugar pinch of cardamom and 1 tablespoon of oil and food the foil paper tightly leaving out no space.
  4. Your meat will be soft by now Drain and set the broth aside. In a pan add sugar and caramelize it be careful not to burn it!
  5. Add the preserved broth, a teaspoon of garam masala,Cumin and coriander powder, 1/2 teaspoon cardamom and nutmeg (optional)
  6. Add the rice and add the foiled veggies and cook
  7. Add the chillies and allow the rice to cook. Mean while use a spoon to make whole in the rice
  8. Add sizzling oil (make sure it’s very hot) and cover the pot for 15 more minuets on a very low heat.
  9. Garnish with the steamed carrots nuts and raisins
  10. Some call it bokhary rice (Ruz bokhary) its all the same. Enjoy this new variation not every day jollof rice😫. Ramadan mubarakum ❣️rabbana taqabbal minna amen
