  1. Take 1/2 kg Mutton
  2. Take 1 cup ginger garlic paste

  6. Prepare 3 tbsp red chilli powder
  7. Take 2 tbsp coriander powder

  10. Prepare 3 cups oil
  11. Take 1 inch cinnamon
  12. Take 2-3 Cardamoms
  13. Make ready 1 black cardamom
  14. Get 5-6 Black pepper
  15. Make ready 1 tbsp jeera
  16. Get 2-3 bay leaves
  17. Get 1 bowl mix chopped mint leaves coriander leaves
  18. Make ready 2 tbsp biryani masala
  19. Prepare 1/2 cup saffron milk, pinch saffron soak in milk
  20. Make ready As required Biryani essence

Steps to make Hyderabadi Mutton Biryani:
  1. Wash and take mutton in a bowl and keep aside. Heat oil and fry sliced onion till golden brown. Take a bowl add mutton add fresh ginger chili garlic paste. Add hung curd. All dry masala garam masala brown onion mix it and marinate for 5 hours in the fridge.
  2. Take a pressure cooker add oil add dry garam masala. Once it splutters adds 2 sliced green chilies. And marinated mutton and cooked for 2 - 3 whistles.
  3. Take a heavy bottom vessel to add water to add the dry masala. Cinnamon cardamom jeera black pepper. Add salt bring it to a boil. Add soaked basmati rice and cook 50 % and drain in a colander.
  4. Take a heavy bottom vessel to add half rice and spread it add cooked mutton gravy spread it. Sprinkle chopped mint coriander leaves. Add half cooked rice over it and sprinkle with fried brown onion and mint coriander leaves. Add saffron milk. Add water on the sides over rice. Add half a cup if needed. and close the lid tightly. Or seal using atta. Cook in high flame for 10 minutes and in slow flame for 20 minutes. Place tawa under it if it sticks.
  5. Off the flame and Check it. Serve hot mutton biriyani with baigan khatta and onion raita. Enjoy
  6. Note- here I didn't used raw papaya paste. If you use raw papaya paste you can directly cook in pot. No need of adding and cooking in pressure cooker.
