Instructions to make Veg. Enchiladas:
To prepare an enchiladas sauce. Firstly heat olive oil in a pan. And add garlic to it.
Now add onion in it. Saute for 30 seconds and add spring onions.
Saute just for 30 seconds. And add tomatoes puree. Don't cook onion for long time because we have to keep it for baking also.
After 1 min adds oregano, chili flakes, and salt. After 1 min adds cumin powder and sugar to it. We are adding sugar to balance tomatoes' sourness.
Mix it well and now add ketchup to it. No need to add water. Mix it properly and keep it aside for some time.
For stuffing. Heat oil in a pan and add garlic and onion. Saute for 30 seconds.
Now add broccoli, mix bell peppers. Saute for 30 seconds. Now add Mexican beans and corn kernels.
Mix it properly. Saute for 30 seconds. And add spring onions. Don't overcook vegetables.
Now add all the seasoning like chilli flakes, oregano,cumin powder and salt.
Mix it well and keep it aside for cooling. Add 2 tbsp spoon of enchiladas sauce to it. Which we made before.
Now take a tortilla and keep the mixture on one side of the tortilla and shred the processed cheese on it.
Roll it carefully n assemble it into one baking tray. Before you assemble the roll just spread the enchiladas sauce on it.
Place all the tortillas in the tray. And spread cheese on it.
Place some jalapenos and olives for garnishing.
Bake it in preheats the oven for 20-25 mins. Till cheese gets melted.
Your enchiladas are ready to serve. Serve it hot.
