The ingredients needed to make Carrot Rice:
  1. Make ready 1 . Cooked rice - 1 cup
  2. Take 2 . Carrot - 1 grated
  3. Get 3 . Onion - 1
  4. Get 4 . Green chilli - 1
  5. Prepare 5 . Turmeric - 1/2 tsp
  6. Get 6 . Hing - pinch
  7. Get 7 . Curry leaves - 1 string
  8. Make ready 8 . Garam masala - 1/2 tsp
  9. Take 9 . Salt - as needed
  10. Prepare 10 . Coriander leaves - 1 tbsp
  11. Take To temper:
  12. Take 1 . Ghee - 1 tbsp
  13. Get 2 . Fennel seeds - 1/2 tsp
  14. Take 3 . Cashews - 5 slit into two
Instructions to make Carrot Rice:
    1. Cook the rice and let it cool completely. - - 2. Meanwhile heat 1 tbsp of ghee in kadai add fennel seeds, cashews. Roast till cashews change to golden brown. - - 3. Now add thinly sliced onion, minced green chilli, curry leaves. Saute a bit.
    1. Now add grated carrot, turmeric powder, hing, salt. Saute nicely. - - 5. Add graram masala saute a bit. Now add cooked rice to this. Mix thoroughly. Adjust salt. - - 6. Garnish with coriander leaves. Serve hot with any chips.
