  2. Pour 1 tbsp oil into a frying pan and brown the duck legs and bacon on all sides. You may need to do this in 2 batches
  3. Pour half of the chicken stock into a large casserole dish and add in the bacon and duck legs
  4. Cover and put in the oven for 30 minutes
  5. Meanwhile, add another tbsp of oil to the frying pan and fry the onion, carrots and garlic for 4 minutes over a nedium heat until browing
  6. Add the tomatoes and continue to cook for a further 3 minutes
  7. Take off the heat then pour the remaining chicken stock into the frying pan to deglaze it and then pour the whole mixture into the casserole dish
  8. Add the chopped thyme and put back in the oven with the lid on for 60 minutes
  9. When the 60 minutes are up, add the final 1 tbsp oil to the frying pan and cook the broccoli for 5 to 10 minutes until browning all over and softening. It's nice to leave it a little bit crunchy
  10. Take the duck out of the casserole dish while you mix the broccoli through the rest of the vegetables
  11. Serve with my garlic mashed potato recipe
