  1. Get 2-3 sheets Abura-age (Fried Thin Tofu) *cut into small pieces
  2. Get 2 Spring Onions *sliced diagonally
  3. Get 3-4 Eggs *lightly whisked
  4. Get 2 servings Freshly Cooked Rice
  5. Take Shichimi (Japanese Chilli Spice Mix) *OR Ground Chilli
  6. Get <Sauce>
  7. Take 3/4 cup Dashi Stock *OR 3/4 cup Water & 1/2 teaspoon Dashi Powder
  8. Get 1 teaspoon Sugar
  9. Prepare 2 tablespoons Mirin
  10. Take 2 tablespoons Soy Sauce

You can use it to make inari sushi, or add it to miso soup and hot pot. You can make Aburaage from scratch at home. Deep fried tofu, or abura-age, is used in soups, one pot cookery, noodle dishes, and in many other ways. It can also be delicious all by itself as a topping on a bowl of rice (domburi).

Steps to make Abura-age (Thin Fried Tofu) & Egg Rice Bowl:
  1. Wrap Abura-age with paper towel and heat in microwave for 30 seconds. Then press to remove excess oil. Cut into small pieces. *Note: If you don’t have the microwave, soak in hot water is alternative option.
  2. Place Water, Dashi Powder, Sugar, Mirin and Soy Sauce in a frying pan or saucepan, and bring the boil over medium high heat. Add sliced Spring Onion and Abura-age, cook until Spring Onion is soft.
  3. Pour over lightly whisked Eggs but DO NOT stir. Cover with a lid until the egg is softly cooked.
  4. Half fill a bowl with Freshly Cooked Rice and cover it with the Abura-age & Egg mixture. Sprinkle with Shichimi (Japanese Chilli Spice Mix) and enjoy.

Deep fried tofu, or abura-age, is used in soups, one pot cookery, noodle dishes, and in many other ways. It can also be delicious all by itself as a topping on a bowl of rice (domburi). Deep fried tofu can be purchased at most Asian food stores, but it is easily made at home, and all that you'll need is a wok. Aburaage, also called Usuage, is thin deep fried tofu. It has a mild soy flavor and a spongy texture and absorbs seasonings well.
