  5. One by one, place the potato slices into a greased oven dish.
  6. Remove thyme sprigs. Stir cream cheese into the cream mixture. Simmer for a few minutes and pour cream over potatoes.
  7. Top with freshly grated parmesan and mature cheddar.
  8. Bake for 45 minutes.
